Mac and Cheese: 1 cup elbow pasta, cooked according to package directions 1/4 cup grated Monterey jack cheese 1/4 cup grated provolone cheese 1/4 cup grated smoked Gouda cheese 1/4 cup grated cheddar cheese 3/4 cup milk 4 slices thick-cut bacon 1. In a medium skillet, cook bacon over medium high heat until brown and crisp. Remove to a paper towel-lined plate. When cool, break into small pieces. Set aside. 2. In a medium saucepan, bring milk to a simmer over medium-low heat. Add cheeses and stir well to combine. Cook, stirring occasionally, until all cheese is melted and mixture is smooth, about 10 minutes. 3. Add pasta and stir well to combine. Transfer to a small serving dish and top with bacon. 4. Serve warm.
