INGREDIENTS:
4 Medium Sweet Potatoes Dash Lemon Juice 1/2 Cup Vegetable Oil 1 Teaspoon Sugar 1 Teaspoon Cinnamon 1 Cup Water
DIRECTIONS:
Add a dash of lemon juice to a bowl of cold water. Wash, then peel sweet potatoes. Cut potatoes into slices or sticks. Dip cut potatoes into the bowl of lemon water. Drain potatoes and dry with paper towels before frying. Heat oil in skillet. Fry potatoes (in small batches) until golden brown on both sides. Be careful of splattering oil. Drain each bath of potatoes on paper towels; place on serving platter. Sprinkle each batch with sugar and cinnamon. Serve warm.
